Fragrant Veg Biryani
Servings: 1 bowl (approx. 100g) | Prep: 30 mins | Cook: 30 mins
🧄 Ingredients
- 1 cup basmati rice (soaked)
- ¾ cup mixed vegetables (carrot, beans, peas, potato)
- 1 medium onion (thinly sliced)
- 1 green chili (slit)
- ½ cup chopped mint and coriander leaves
- 1 tsp ginger garlic paste
- 2 tbsp oil or ghee
- ½ tsp turmeric powder
- ½ tsp red chili powder
- 1 tsp biryani masala or garam masala
- Whole spices (bay leaf, cloves, cardamom, cinnamon)
- Salt to taste
- 1 ¾ cup water
🍽️ Instructions
- Heat oil or ghee in a heavy bottom pot. Sauté whole spices until aromatic.
- Add sliced onions and sauté until golden. Add ginger garlic paste and green chili, cook for a minute.
- Add vegetables, turmeric, chili powder, and biryani masala. Sauté for 2–3 mins.
- Add mint, coriander, soaked rice, salt, and water. Mix gently.
- Cover and cook on low heat for 15–20 minutes until rice is fully done.
- Fluff up and rest 5 minutes before serving with raita or salan.
