🧄 Ingredients

  • 1½ cups ridge gourd, peeled & cubed
  • 2 Tbsp moong dal
  • ⅛ tsp turmeric powder
  • Salt to taste
  • 1 cup water
  • 2 tsp roasted gram (pottukadalai)
  • 1 tsp cumin seeds
  • 1 tsp whole black pepper
  • 1 Tbsp oil / ghee
  • ½ tsp mustard seeds
  • 1 sprig curry leaves & pinch hing
  • Fresh cilantro to garnish

🍽️ Instructions

  1. Pressure-cook moong dal, ridge gourd, turmeric, salt & 1 cup water for 3 whistles (or 8 mins IP, NPR).
  2. Grind roasted gram, cumin & pepper with a splash of water to a smooth paste.
  3. Add paste to cooked dal-gourd mix; simmer 5 mins, stirring to avoid lumps.
  4. Heat oil/ghee; splutter mustard, add curry leaves & hing. Pour tempering over kootu.
  5. Garnish with cilantro and serve hot with rice, chapati or millet.
