🧄 Ingredients
- 1½ cups ridge gourd, peeled & cubed
- 2 Tbsp moong dal
- ⅛ tsp turmeric powder
- Salt to taste
- 1 cup water
- 2 tsp roasted gram (pottukadalai)
- 1 tsp cumin seeds
- 1 tsp whole black pepper
- 1 Tbsp oil / ghee
- ½ tsp mustard seeds
- 1 sprig curry leaves & pinch hing
- Fresh cilantro to garnish
🍽️ Instructions
- Pressure-cook moong dal, ridge gourd, turmeric, salt & 1 cup water for 3 whistles (or 8 mins IP, NPR).
- Grind roasted gram, cumin & pepper with a splash of water to a smooth paste.
- Add paste to cooked dal-gourd mix; simmer 5 mins, stirring to avoid lumps.
- Heat oil/ghee; splutter mustard, add curry leaves & hing. Pour tempering over kootu.
- Garnish with cilantro and serve hot with rice, chapati or millet.
