Peanut Rice (Verkadalai Sadam)
Servings: 1 bowl (approx. 100g) | Prep: 10 mins | Cook: 15 mins
🧄 Ingredients
- ¾ cup cooked rice (cooled)
- ¼ cup roasted peanuts
- 2 dry red chilies
- 1 tsp urad dal
- 1 tsp chana dal
- ½ tsp mustard seeds
- Few curry leaves
- 1 pinch asafoetida (hing)
- 1 tsp sesame seeds
- 1 tbsp grated coconut (optional)
- 1½ tbsp sesame oil
- Salt to taste
🍽️ Instructions
- Dry roast peanuts and set aside. Optionally remove skins.
- In a pan, heat oil. Add mustard seeds, urad dal, chana dal, curry leaves, and red chilies.
- Add hing, sesame seeds, and coconut (if using). Sauté briefly.
- Add peanuts and sauté for a minute.
- Mix in cooked rice and salt. Toss well till evenly coated.
- Serve hot or pack for lunch with appalam or curd.
