🧄 Ingredients
- 1 cup cooked rice (cooled)
- 1 to 1.5 tbsp lemon juice
- 1 tbsp oil (preferably sesame or peanut oil)
- ½ tsp mustard seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 1 or 2 green chilies (slit)
- 1 dry red chili
- ¼ tsp turmeric powder
- Few curry leaves
- 1 pinch hing (asafoetida)
- Salt to taste
- Fried peanuts (for garnish)
🍽️ Instructions
- Heat oil in a pan. Add mustard seeds and let them splutter.
- Add urad dal, chana dal, red chili, green chilies, curry leaves, and hing. Sauté until dals are golden.
- Add turmeric and turn off the heat. Let the mixture cool slightly.
- Add lemon juice and salt. Mix well.
- Pour the tempering over cooled rice and gently mix to coat the rice evenly.
- Garnish with fried peanuts and serve fresh or pack in lunch box
