🧄 Ingredients

  • 1 cup cooked rice (cooled)
  • 1 to 1.5 tbsp lemon juice
  • 1 tbsp oil (preferably sesame or peanut oil)
  • ½ tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 or 2 green chilies (slit)
  • 1 dry red chili
  • ¼ tsp turmeric powder
  • Few curry leaves
  • 1 pinch hing (asafoetida)
  • Salt to taste
  • Fried peanuts (for garnish)

🍽️ Instructions

  1. Heat oil in a pan. Add mustard seeds and let them splutter.
  2. Add urad dal, chana dal, red chili, green chilies, curry leaves, and hing. Sauté until dals are golden.
  3. Add turmeric and turn off the heat. Let the mixture cool slightly.
  4. Add lemon juice and salt. Mix well.
  5. Pour the tempering over cooled rice and gently mix to coat the rice evenly.
  6. Garnish with fried peanuts and serve fresh or pack in lunch box
