🧄 Ingredients

  • 1 cup lady's finger (cut into 1-inch pieces)
  • ½ cup toor dal (pigeon peas)
  • 1 small onion (sliced)
  • 1 small tomato (chopped)
  • ¼ tsp turmeric powder
  • 1 tbsp tamarind paste
  • Salt to taste
  • 2 cups water
  • 1½ tsp sambar powder
  • ½ tsp mustard seeds
  • ¼ tsp asafoetida
  • 1 sprig curry leaves
  • 1 tsp oil
  • 2 dry red chilies
  • Fresh coriander to garnish

🍽️ Instructions

  1. Wash and pressure cook toor dal with turmeric and 1 cup water for 3–4 whistles. Mash and set aside.
  2. In a pan, sauté lady's finger in a few drops of oil until it's lightly browned to reduce sliminess. Set aside.
  3. In a pot, add onion, tomato, salt, tamarind paste, and 1 cup water. Boil for 5–6 minutes.
  4. Add sautéed lady’s finger and sambar powder. Cook for 5 more minutes.
  5. Add the cooked dal and simmer everything together for 10 minutes.
  6. In a small pan, heat oil and prepare tempering with mustard seeds, red chilies, curry leaves, and asafoetida.
  7. Pour the tempering over the sambar. Stir and simmer for another 2 minutes.
  8. Garnish with coriander and serve hot with rice or idli/dosa.
