🧄 Ingredients

  • 2 cups idli or dosa batter (fermented)
  • 1 medium onion (finely chopped)
  • 1 green chili (chopped)
  • 1 tsp grated ginger
  • 1 tbsp chopped coriander leaves
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • Few curry leaves
  • Oil for greasing and frying

🍽️ Instructions

  1. Heat 1 tsp oil in a pan, splutter mustard seeds, then add urad dal, chana dal, curry leaves, green chilies, and onions. Sauté until golden.
  2. Mix this tempering into the idli/dosa batter along with coriander and ginger.
  3. Heat paniyaram pan and grease each mold with oil. Pour spoonfuls of batter into each cavity.
  4. Cover and cook on medium flame until the base is golden brown. Flip and cook the other side until crisp.
  5. Serve hot with chutney or sambar.
