Kerala Appam (Soft Hoppers)
Servings: 3 appams (approx. 100g) | Prep: 8 hrs | Cook: 20 mins
🧄 Ingredients
- 1 cup raw rice
- ¼ cup grated coconut
- 1 tbsp sugar
- ½ tsp dry active yeast
- Salt to taste
- Water as needed
- Oil for greasing the pan
🍽️ Instructions
- Soak rice in water for 4–5 hours. Drain and blend with grated coconut and water to form a smooth batter.
- Dissolve sugar in lukewarm water and activate the yeast for 10 mins. Add to the batter.
- Mix batter well. Ferment for 8 hours or overnight until light and bubbly.
- Add salt and a little water if needed. Batter should be pourable.
- Heat an appam pan, pour batter in the center, swirl to coat edges. Cover and cook on low heat until center is soft and edges are crisp.
- Serve hot with vegetable stew or coconut chutney.
