🧄 Ingredients

  • 250 g green beans (tender), finely chopped
  • 3 Tbsp fresh or frozen grated coconut
  • 1 Tbsp + ½ Tbsp oil
  • ¼ tsp mustard seeds
  • 1 tsp urad dal (optional)
  • 1 tsp chana dal (optional)
  • 1 dried red chili, broken
  • 1 sprig curry leaves
  • ⅛ tsp asafoetida
  • ⅛ tsp turmeric
  • ½ tsp red-chili or sambar powder
  • ⅓ tsp salt (or to taste)
  • A splash of water as needed

🍽️ Instructions

  1. Heat oil in a pan. Temper mustard, urad dal, chana dal & broken red chili until dals turn golden.
  2. Add asafoetida & curry leaves; fry until leaves crisp.
  3. Toss in chopped beans, turmeric & salt. Sauté 2 mins.
  4. Cover & cook 3–5 mins on low, sprinkling water only if beans look dry.
  5. When beans turn tender, add red-chili/sambar powder & coconut. Sauté 1 min.
  6. Serve hot with rice, rasam or chapati.
