Green Beans Stir Fry Recipe
Enjoy a simple and nutritious Beans Poriyal made with finely chopped green beans stir-fried with mustard seeds, curry leaves, and a touch of grated coconut. 🧄 Ingredients
- 250 g green beans (tender), finely chopped
- 3 Tbsp fresh or frozen grated coconut
- 1 Tbsp + ½ Tbsp oil
- ¼ tsp mustard seeds
- 1 tsp urad dal (optional)
- 1 tsp chana dal (optional)
- 1 dried red chili, broken
- 1 sprig curry leaves
- ⅛ tsp asafoetida
- ⅛ tsp turmeric
- ½ tsp red-chili or sambar powder
- ⅓ tsp salt (or to taste)
- A splash of water as needed
🍽️ Instructions
- Heat oil in a pan. Temper mustard, urad dal, chana dal & broken red chili until dals turn golden.
- Add asafoetida & curry leaves; fry until leaves crisp.
- Toss in chopped beans, turmeric & salt. Sauté 2 mins.
- Cover & cook 3–5 mins on low, sprinkling water only if beans look dry.
- When beans turn tender, add red-chili/sambar powder & coconut. Sauté 1 min.
- Serve hot with rice, rasam or chapati.
