🍽️ Instructions

    Rinse: Wash 1 cup of proso millet thoroughly under running water. Soak (optional): Soak for 15–30 minutes to reduce cooking time and improve digestibility.
  1. Boil water: Bring ~2.5 cups of water to a boil in a pot.
  2. Add millet & salt: Drain soaked millet, add it to boiling water, and season with a pinch of salt if desired.
  3. Simmer: Cover and cook on low heat for 15–18 minutes, or until water is absorbed.
  4. Rest: Remove from heat and let it sit, covered, for 5 minutes to steam gently.
  5. Fluff & serve: Use a fork to fluff and serve like rice—great with sambar, dal, or stir-fried veggies.
