🧄 Ingredients

  • 1 cup basmati rice (rinsed & soaked 20 mins)
  • 1½ cups thick coconut milk
  • ½ cup water
  • 1 tbsp coconut oil or ghee
  • 1 bay leaf
  • 4 cloves
  • 1-inch cinnamon stick
  • ½ tsp cumin seeds
  • 1 sliced green chili
  • 1 tsp grated ginger
  • Few cashews (optional)
  • Salt to taste

🍽️ Instructions

  1. Heat oil or ghee in a pan. Add cumin seeds, bay leaf, cinnamon, cloves, and cashews. Sauté until aromatic.
  2. Add green chili and ginger. Sauté for a minute.
  3. Drain the soaked rice and add it to the pan. Sauté gently for 2–3 minutes.
  4. Pour in the coconut milk and water. Add salt and mix well.
  5. Cover and cook on low flame until rice is fully done and fluffy. Rest for 5 minutes before serving.
  6. Serve warm with kurma, chutney, or vegetable curry.
