🧄 Ingredients
- 1 cup basmati rice (rinsed & soaked 20 mins)
- 1½ cups thick coconut milk
- ½ cup water
- 1 tbsp coconut oil or ghee
- 1 bay leaf
- 4 cloves
- 1-inch cinnamon stick
- ½ tsp cumin seeds
- 1 sliced green chili
- 1 tsp grated ginger
- Few cashews (optional)
- Salt to taste
🍽️ Instructions
- Heat oil or ghee in a pan. Add cumin seeds, bay leaf, cinnamon, cloves, and cashews. Sauté until aromatic.
- Add green chili and ginger. Sauté for a minute.
- Drain the soaked rice and add it to the pan. Sauté gently for 2–3 minutes.
- Pour in the coconut milk and water. Add salt and mix well.
- Cover and cook on low flame until rice is fully done and fluffy. Rest for 5 minutes before serving.
- Serve warm with kurma, chutney, or vegetable curry.
