🧄 Ingredients
- 3 cups avarakkai / broad beans, thin-sliced
- 3 Tbsp moong dal (soaked 15 min)
- ½ cup grated coconut
- 1 tsp mustard seeds
- 2 tsp urad dal
- 3 dried red chilies
- 10 curry leaves
- ¼ tsp asafoetida
- ¼ tsp turmeric (optional)
- 1 tsp sugar (optional)
- Salt to taste
- 2 tsp coconut oil (or any oil)
- 2 Tbsp water as needed
🍽️ Instructions
- Heat coconut oil in a pan; splutter mustard, then fry urad dal, red chilies, asafoetida & curry leaves until dal turns golden.
- Add drained moong dal & sliced avarakkai; stir well. Season with salt & optional turmeric.
- Cover and cook on low heat 8-10 mins, sprinkling water if the mix dries out.
- When beans are just tender, open lid; let excess moisture evaporate.
- Mix in sugar (if using) and grated coconut; sauté 1 min. Serve hot with rice, rasam or sambar.
