🧄 Ingredients

  • 2 small bitter gourds (thinly sliced)
  • 1 medium potato (peeled and cubed)
  • ¾ cup grated coconut
  • 3 dry red chilies
  • 1 tbsp coriander seeds
  • 1 tsp tamarind paste
  • ½ tsp turmeric powder
  • ½ tsp mustard seeds
  • Few curry leaves
  • 1 tbsp coconut oil
  • Salt to taste
  • Water as needed (just to blend)

🍽️ Instructions

  1. Dry roast coriander seeds and red chilies. Grind them with grated coconut and tamarind into a coarse, dry paste (no water or just a few drops).
  2. Steam or boil bitter gourd and potato cubes until just tender. Drain and set aside.
  3. Heat coconut oil in a pan. Add mustard seeds and let them splutter. Add curry leaves.
  4. Add the ground coconut masala and stir-fry on low heat for 3–4 minutes until aromatic.
  5. Add the cooked bitter gourd and potato. Mix gently to coat with masala. Sauté for 5–7 minutes until well roasted and dry.
  6. Serve hot with steamed rice and dal.
