🧄 Ingredients

  • 2 cups ash gourd (peeled and cubed)
  • ¾ cup grated coconut
  • 2 dry red chilies
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • Marble-sized tamarind (soaked)
  • 1 tsp mustard seeds
  • 1 dry red chili (for tempering)
  • Few curry leaves
  • 1 tsp coconut oil
  • Salt to taste
  • Water as needed

🍽️ Instructions

  1. Boil the ash gourd cubes with a pinch of turmeric and salt until tender. Set aside.
  2. Grind coconut, red chilies, coriander seeds, cumin, turmeric, and tamarind into a smooth paste with water.
  3. Heat the ground paste in a pan, add boiled ash gourd, adjust salt and water, and let it simmer for 5–7 minutes.
  4. In another pan, heat coconut oil, splutter mustard seeds, add dry red chili and curry leaves, then pour over the curry.
  5. Serve hot with steamed rice or dosa.
