🧄 Ingredients
- ¾ cup raw rice
- 2 cups chopped brinjals (eggplants)
- 2 tsp vangi bath powder
- ½ tsp mustard seeds
- 1 tbsp chana dal
- 1 tbsp urad dal
- 2 tbsp peanuts
- 1 sprig curry leaves
- 2 dry red chilies
- ⅛ tsp turmeric
- Salt to taste
- 2 to 3 tbsp oil
- Water to cook rice
🍽️ Instructions
- Cook rice until fluffy and non-sticky. Set aside to cool.
- Heat oil in a pan. Add mustard, chana dal, urad dal, peanuts and fry till golden.
- Add red chilies, curry leaves, and brinjals. Sauté until brinjals are soft and cooked.
- Add turmeric and vangi bath powder. Sauté for 1-2 minutes.
- Add cooked rice and salt. Mix everything gently until rice is well coated.
- Serve warm with papad or curd.
