🧄 Ingredients

  • 1 cup cooked rice (preferably basmati)
  • 1 cup fresh mint leaves (pudina)
  • ¼ cup coriander leaves
  • 2 green chilies
  • 1-inch ginger
  • 2 garlic cloves
  • 1 onion (thinly sliced)
  • 1 tbsp oil
  • ½ tsp cumin seeds
  • ½ tsp garam masala
  • ½ tsp turmeric powder
  • Salt to taste
  • Few cashews (optional, for garnish)
  • 1 tbsp lemon juice (optional)
  • Water (as needed to grind paste)

🍽️ Instructions

  1. Grind mint, coriander, green chilies, ginger, and garlic into a smooth paste with little water.
  2. Heat oil in a pan, add cumin seeds and let them crackle. Add sliced onions and sauté until golden.
  3. Add the mint paste and sauté until the raw smell disappears.
  4. Add turmeric, garam masala, and salt. Mix well.
  5. Add cooked rice and toss gently until the masala coats the rice evenly.
  6. Optionally, garnish with cashews and lemon juice. Serve hot or pack in a lunch box.
