🧄 Ingredients

  • 1 cup basmati rice (soaked)
  • ¾ cup mixed vegetables (carrot, beans, peas, potato)
  • 1 medium onion (thinly sliced)
  • 1 green chili (slit)
  • ½ cup chopped mint and coriander leaves
  • 1 tsp ginger garlic paste
  • 2 tbsp oil or ghee
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • 1 tsp biryani masala or garam masala
  • Whole spices (bay leaf, cloves, cardamom, cinnamon)
  • Salt to taste
  • 1 ¾ cup water

🍽️ Instructions

  1. Heat oil or ghee in a heavy bottom pot. Sauté whole spices until aromatic.
  2. Add sliced onions and sauté until golden. Add ginger garlic paste and green chili, cook for a minute.
  3. Add vegetables, turmeric, chili powder, and biryani masala. Sauté for 2–3 mins.
  4. Add mint, coriander, soaked rice, salt, and water. Mix gently.
  5. Cover and cook on low heat for 15–20 minutes until rice is fully done.
  6. Fluff up and rest 5 minutes before serving with raita or salan.
