Soft South Indian Idli
Servings: 4–5 idlis (approx. 100 g) | Prep: 10 mins (excludes fermentation) | Cook: 10 mins
🧄 Ingredients
- 1 cup idli rice
- ¼ cup whole urad dal (hulled)
- ¼ tsp fenugreek seeds
- Salt as needed
- Water (for soaking & grinding)
- Oil (to grease idli plates)
🍽️ Instructions
- Rinse idli rice, urad dal, and fenugreek seeds separately. Soak rice for 6 hrs; dal + fenugreek for 4 hrs.
- Grind urad dal to a light, fluffy batter; grind rice to slightly coarse texture.
- Combine both batters; ferment 8–12 hrs (overnight) until doubled.
- Add salt, pour into greased idli molds.
- Steam in a steamer or pressure cooker (no whistle) for 10–12 mins.
- Let rest, demould, serve hot with sambar or chutney.
