Konkani-Style Bitter Gourd & Potato Curry
Servings: 1 bowl (approx. 100g) | Prep: 20 mins | Cook: 25 mins
🧄 Ingredients
- 250 g tindora (ivy gourd), washed & sliced lengthwise
- 2 Tbsp oil (sunflower or peanut)
- 1 tsp cumin seeds
- 1 pinch asafoetida
- 3–4 dry red chilies
- 1–2 green chilies, slit (optional)
- 10–12 curry leaves
- ½ tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt, to taste
- 2 Tbsp chopped coriander leaves
🍽️ Instructions
- Wash and dry tindora; slice lengthwise into quarters or thin strips.
- Heat oil in a pan. Add cumin, asafoetida, red & green chilies, and curry leaves; sauté 30 seconds.
- Add sliced tindora; stir well to coat with oil. Sauté on medium-high for 4–5 minutes.
- Lower heat. Add turmeric, red chili, coriander, salt; stir to combine.
- Cover and cook on low flame for 12–15 minutes, stirring occasionally.
- Uncover, sprinkle garam masala and chopped coriander; cook 1 more minute. Serve hot.
