🧄 Ingredients

  • 250 g tindora (ivy gourd), washed & sliced lengthwise
  • 2 Tbsp oil (sunflower or peanut)
  • 1 tsp cumin seeds
  • 1 pinch asafoetida
  • 3–4 dry red chilies
  • 1–2 green chilies, slit (optional)
  • 10–12 curry leaves
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt, to taste
  • 2 Tbsp chopped coriander leaves

🍽️ Instructions

  1. Wash and dry tindora; slice lengthwise into quarters or thin strips.
  2. Heat oil in a pan. Add cumin, asafoetida, red & green chilies, and curry leaves; sauté 30 seconds.
  3. Add sliced tindora; stir well to coat with oil. Sauté on medium-high for 4–5 minutes.
  4. Lower heat. Add turmeric, red chili, coriander, salt; stir to combine.
  5. Cover and cook on low flame for 12–15 minutes, stirring occasionally.
  6. Uncover, sprinkle garam masala and chopped coriander; cook 1 more minute. Serve hot.
